Ingredients:
1 serving boneless Pork Chop
¼ tsp freshly ground Black Pepper
1 Tbsp finely snipped contemporary Rosemary or 1 teaspoon dried Rosemary,
2 Garlic Cloves, minced
5 Cherry Tomatoes cut in half
¼ Medium Onion minced
Juice from ½ contemporary Lemon
Preparation:
Preheat oven to 425°F. Line a shallow roasting pan with foil. Sprinkle all sides of pork chop with pepper; put aside.
In a small bowl mix rosemary and garlic, sprinkle the combination evenly over all sides of the pork chop. Place pork chop within the roasting pan place minced onion and cherry tomato slices on high of pork chop and squeeze the juice of a ½ lemon on high.
Roast pork chop for 10 minutes. Reduce oven temperature to 350°F and proceed roasting about 25 minutes.
